Fresh Milled Flour Rolls

These 1 Hour Fresh Milled Flour Rolls are soft, fluffy, and full of natural flavor. They are made using fresh milled flour (FMF) from hard white wheat, which gives a light color and mild taste compared to regular whole wheat.

Using fresh milled flour is one of the best ways to make healthy homemade bread. It keeps all the nutrients like fiber, vitamins, and minerals. When you grind wheat at home using machines like a NutriMill grain mill or mix the dough in a Bosch mixer, you get fresh, high-quality flour that makes your bread taste amazing.

These rolls are perfect when you want something quick. Unlike traditional bread that takes many hours, this recipe is ready in about 1 hour. The rolls are soft inside, slightly golden outside, and perfect for dinner, sandwiches, or snacks.

Why Use Hard White Wheat?

Hard white wheat is ideal for soft rolls because:

  • It has a mild, slightly sweet flavor
  • It produces lighter-colored bread
  • It still keeps all the health benefits of whole grains

Ingredients

  • 3 cups fresh milled hard white wheat flour
  • 1 cup warm milk (or water)
  • 2 tablespoons honey or sugar
  • 2 1/4 teaspoons instant yeast
  • 1 teaspoon salt
  • 3 tablespoons butter (softened)

Instructions

Step 1: Prepare Yeast Mixture

In a large bowl (or Bosch mixer bowl), add warm milk and honey.

Sprinkle yeast on top and let it sit for 5–10 minutes until it becomes foamy. This shows the yeast is active.

Step 2: Make the Dough

Add fresh milled flour, salt, and softened butter.

Mix until a soft dough forms. If using a Bosch mixer, mix on low speed.

The dough should be soft and slightly sticky, not dry.

Step 3: Knead the Dough

Knead the dough for about 8–10 minutes until it becomes smooth and elastic.

  • By hand: knead on a clean surface
  • By mixer: use dough hook

Step 4: First Rise (Quick Rise)

Cover the dough and let it rest in a warm place for 20 minutes.

It will puff slightly but does not need to double.

Step 5: Shape the Rolls

Divide the dough into 10–12 equal pieces.

Roll each piece into a smooth ball and place in a greased baking dish.

Step 6: Second Rise

Cover and let the rolls rise for 15–20 minutes until they look puffy and slightly touching.

Step 7: Bake

Preheat oven to 190°C (375°F).

Bake for 15–18 minutes until golden brown on top.

Step 8: Finish and Serve

Brush the hot rolls with melted butter for a soft and shiny top.

Serve warm and enjoy!

Tips & Tricks

  • Fresh milled flour needs more liquid, so adjust if dough feels dry
  • Do not add too much flour—soft dough makes soft rolls
  • Use warm (not hot) liquid to protect yeast
  • A Bosch mixer makes kneading easier and faster
  • For extra soft rolls, cover with a cloth after baking

Notes

  • These rolls are slightly denser than white rolls but much healthier
  • Best eaten fresh the same day
  • You can store leftovers in an airtight container for 1–2 days
  • You can replace milk with water for a dairy-free version
