Sweet tea, like coffee, is a staple in many homes. It’s nice to have sweet tea concentrate on your shelves for surprise guests, power outages or simple convenience. It’s easy to make, and only takes 3 quarts of water to mix up a full gallon of tea when opened.
Ingredients per quart-
10 black tea bags
1 1/2 cups sugar
1-2 tbsp lemon juice (optional)
Pour the sugar into the jar. Place the tea bags in the jar, leaving the tags hanging outside of the jar. Carefully pour boiling water in the jar to 1″ headspace. Put a flat and ring on to hold the tea tags in place. Let the tea steep in the jar for 60 minutes. Remove the tea bags from the jar, and squeeze extra liquid from the tea bags into the jar. If adding lemon juice, add it now. Top off the jar with more water if needed, to reach 1/4″ headspace. Wipe the rims with a paper towel dipped with vinegar, and put the flats and rings on fingertip tight.
Get your WB (water bath canner) ready. Fill the canner with hot water and a splash of vinegar. The vinegar will keep your jars from getting hard water film on them. Place your jars in the canner, making sure the water level is 1-2 inches above the jars. Bring the water in your canner to a rolling boil. Start your timer for 15 minutes. When the timer goes off, turn the burner off. Carefully remove the jars from the canner, and set on a kitchen towel to cool for 24 hours.
Now you can remove the rings, wash the jars and label them for your shelves.
When you open a jar, pour it into a pitcher with 3 quarts of cold water, stir and enjoy!
