- 1 pound (450g) chicken fillet 13.50 fl oz (400 ml) coconut milk (1 can)
- 1 red pepper (250g)
- broccoli 150 g
- 1 small onion (50-60g approx.)
- 1 small carrot (approximately 50-60 g) or 1/2 large carrot (at your discretion)
- 25 lb (10 g) ginger
- 1 clove garlic
- a small handful of cashews (approximately 1 oz / 30 g) (optional)
- 1 tablespoon (14 g) red curry paste
- 1 tablespoon chicken masala
- 1 teaspoon coriander powder
- 1 tablespoon curry powder
- season with salt and pepper to taste
- 1 cup (3.5 oz / 100 g) broccoli rice (per serving)
Step-by-step instructions for making Keto Coconut Chicken Curry:
- Peel and mince the onion, garlic, and ginger.
- Cut the chicken breast or fillet into small pieces.
- Chop the red bell pepper and broccoli as well.
- In a large griddle, sauté the minced onion, garlic, ginger, and a small amount of cooking oil for 2-3 minutes, or until clear.
- Add the chicken to the plate as well and cook for 1-2 minutes on all sides.
- Fry the curry tail for about 1 minute.
- Coconut milk should be used to deglaze everything.
- Include the chopped red bell pepper and broccoli as well.
- Season with the chicken masala flavour mixture, curry powder, coriander powder, salt, and pepper to taste.
- Cook for about 20 minutes on low to medium heat.
- While the curry is cooking, make the broccoli rice:
Making Broccoli Rice:
- Trim the florets from your broccoli head.
- Blend for 30-45 seconds, or until there are no large broccoli chunks, in a food processor.
- Place the raw broccoli rice in a large comal.
- Fry for 5 minutes over medium-high heat with 1-2 tablespoons ghee or a spicy cooking oil.
- Mix in some broccoli rice!
- To taste, season with salt.
- Serve the keto coconut chicken curry with broccoli rice.
