4 eggplant peeled and sliced
6 eggs beaten
5 cups Italian bread crumbs
6 cups or more spaghetti sauce
1 1/2 to 2 16oz packages shredded mozzarella
1 1/2 cups shredded parmesan cheese
1 tsp dried basil
1. Preheat oven to 350°
2. Dip eggplant slices in egg, then in bread crumbs. Place a single layer on a baking sheet. Bake in the preheated oven for 5 minutes . Flip eggplant and bake for another 5 minutes.
3. Use a 9×13-in baking dish. Spread spaghetti sauce and cover the bottom. Place a single layer of eggplant slices in the sauce. Sprinkle with mozzarella and parmesan cheese. Repeat process ending with the cheeses. Sprinkle basil on top.
4. Bake in oven for 35 minutes or until golden brown.
