The Slimming World overnight oats recipe is packed full of healthy breakfast goodness! Making them with yogurt means they’re extra thick and creamy, too

10 minutes plus 12 hours overnight chilling
40g plain porridge oats
2-3 fresh nectarines, stoned and sliced
½ tsp vanilla extract
200g fat-free natural Greek yogurt (or dairy-free soya yogurt, plain and unsweetened, with added calcium, if you need this to be vegan)
Pinch of ground cinnamon
- Put half of the oats in a lidded jar or bowl and top with half of the sliced nectarines.
- Stir the vanilla extract and 3 tbsp water into the yogurt and spoon half into the jar or bowl.
- Add the rest of the oats, most of the remaining fruit and the rest of the yogurt. Top with the rest of the fruit, sprinkle with ground cinnamon and chill overnight. Stir it all together when you’re ready to eat.
