Ingredients (for 2 servings)
For the chicken:
• 300g chicken breasts cut into cubes(raw weight)
• 1 tsp olive oil
• 1 tbsp paprika or smoked paprika
• 1 tsp garlic powder or fresh garlic
• 1 tbsp dried basil
• 1/2 tsp red pepper flakes
• 1 tsp salt
– Cook on medium heat for 3-4 mins each side then set aside
For the sauce:
• 1/2 cup (120ml) low fat milk
• 90g low/zero fat cream cheese
• 15g grated parmesan
• 1 tsp garlic powder
• 1 tsp basil
• 1/4 tsp red pepper flakes
For cooking:
• Cooking spray
• 1 cup spinach/a few handfuls.
• Extra seasoning if needed
Serve with:
• 1/2 cup cooked rice per serving or
• 120g of cooked pasta
Note:
– When cooking the sauce, If it’s too thick add extra milk, if it’s too thin then add extra parmesan or cream cheese
– Make sure you don’t over cook the sauce for too long and keep the heat on LOW! Check for the right consistency
