Air Fryer Egg Cups

Air fryer egg cups are a simple and tasty way to start your day. They are quick to prepare and perfect for breakfast, brunch, or even a light meal. Using the air fryer helps cook the eggs gently, keeping them soft, fluffy, and full of moisture.

This recipe is very flexible and easy to customise. You can use any vegetables you like, such as peppers, onions, spinach, or mushrooms. The combination of eggs, cheese, and double cream creates a rich and creamy texture, while the coriander adds a fresh flavour.

Egg cups are cooked in ramekins, which makes them neat and easy to serve. They are great for meal prep because you can make them ahead of time and reheat when needed. These egg cups are also ideal for busy mornings when you want something filling without much effort.

The cooking process happens in two stages. First, the egg mixture is cooked slowly at a lower temperature so the eggs set gently. Then, extra cheese is added on top and cooked at a higher temperature to melt and lightly brown the cheese. This gives the egg cups a delicious finish.

Serve the egg cups warm on their own or with toast, salad, or fresh fruit. They are satisfying, comforting, and suitable for both adults and children.
