Ingredients

Instructions

Step 1:
Mash the banana well with a fork until smooth. Set aside.

Step 2:
Add the heavy cream, almond milk, and powdered sweetener to a saucepan. Heat over medium heat until it starts to gently simmer. Stir in the vanilla extract, then remove from the heat.

Step 3:
In a separate bowl, whisk the egg yolks with an electric mixer until light and fluffy. Add the mashed banana and mix until fully combined.

Step 4:
Slowly pour half of the warm cream mixture into the egg yolk mixture while whisking continuously. This prevents the eggs from cooking.
Then pour the combined mixture back into the saucepan with the remaining cream. Keep whisking continuously.

Step 5:
Heat the mixture slowly over low heat for about 5–7 minutes. Keep whisking all the time. The mixture will thicken. Do not stop whisking to prevent curdling.

Step 6:
Turn off the heat. Sprinkle the xanthan gum over the top. Whisk again quickly and thoroughly until smooth.

Step 7:
Divide the pudding into 4 dessert cups. Place in the fridge and chill for about 1 hour. The pudding will thicken more as it cools.

Before serving, sprinkle with a little nutmeg or cinnamon. You can also add whipped cream if you like.
