Keto Empanadas Easy Recipe
Ingredients
For the Dough:
- 2 cups almond flour
- 1 cup shredded mozzarella cheese
- 2 oz cream cheese (softened)
- 1 large egg
- 1/2 teaspoon salt
- 1/2 teaspoon garlic powder (optional)
For the Filling:
- 1 cup cooked meat (ground beef, chicken, or turkey)
- 1/2 cup diced onion
- 1/2 cup diced bell pepper (optional)
- 1 teaspoon cumin
- 1 teaspoon paprika
- Salt and pepper, to taste
- 1/2 cup shredded cheese (optional)
Instructions
- Prepare the Dough:
- In a microwave-safe bowl, combine the shredded mozzarella and cream cheese.
- Microwave for 30 seconds, stir, then microwave for another 30 seconds until melted and smooth.
- In a separate bowl, mix the almond flour, salt, and garlic powder. Add the melted cheese mixture and the egg. Mix until a dough forms.
- If the dough is too sticky, you can refrigerate it for about 30 minutes to make it easier to handle.
- Prepare the Filling:
- In a skillet over medium heat, sauté the diced onion and bell pepper (if using) until soft.
- Add the cooked meat, cumin, paprika, salt, and pepper. Mix well and cook for another 3-5 minutes until heated through. Remove from heat and let cool slightly.
- Preheat the Air Fryer:
- Preheat your air fryer to 200 °C (400 °F) for about 5 minutes.
- Assemble the Empanadas:
- Divide the dough into 8 equal pieces. Roll each piece between two sheets of parchment paper to about 1/8 inch thick.
- Cut out circles (about 4-5 inches in diameter) using a round cutter or a glass.
- Place a tablespoon of the filling in the center of each circle. If using, add some shredded cheese on top of the filling.
- Fold the dough over to form a half-moon shape and press the edges to seal. You can use a fork to crimp the edges for a decorative touch.
- Air Fry the Empanadas:
- Place the empanadas in the air fryer basket in a single layer. You may need to do this in batches.
- Air fry at 200 °C (400 °F) for 10-12 minutes, or until golden brown and crispy.
- Serve:
- Once cooked, remove the empanadas from the air fryer and let them cool for a few minutes before serving. Enjoy them as is or with your favorite dipping sauce.
