- 1 lb (about 4 medium) baby potatoes or regular potatoes (cut into chunks or wedges)

 - 1 tsp garlic powder
 - 1 tsp onion powder
 - 1 tsp dried oregano (or fresh if preferred)
 - 1 tsp dried thyme (or fresh)
 - Zest of 1 lemon
 - Juice of 1/2 lemon
 - Salt and pepper to taste

Instructions:
- Prep the Potatoes:
- If using baby potatoes, cut them into halves or quarters. For regular potatoes, cut them into bite-sized chunks or wedges.
 - Rinse the potatoes under cold water and pat them dry with a paper towel to ensure they crisp up in the air fryer.
 
 - Season the Potatoes:
- In a large bowl, toss the potato pieces with olive oil, garlic powder, onion powder, oregano, thyme, lemon zest, salt, and pepper.
 - Squeeze the juice of half a lemon over the potatoes and toss again until evenly coated.
 
 - Air Fry the Potatoes:
- Preheat your air fryer to 400°F (200°C) for about 5 minutes.
 - Place the seasoned potatoes in the air fryer basket in a single layer. Avoid overcrowding to ensure they cook evenly.
 - Air fry the potatoes for 18-20 minutes, shaking the basket halfway through to ensure even cooking. The potatoes should be golden brown and crispy on the outside, tender on the inside.
 
 - Serve:
- Once cooked, remove the potatoes from the air fryer and transfer them to a serving dish.
 - Garnish with freshly chopped parsley and a final squeeze of lemon juice for extra freshness.

- For extra crispiness: Make sure the potatoes are dry before tossing them in oil and seasoning. You can also spray a little extra oil on them before air frying.
 - Add Parmesan: For a cheesy version, sprinkle grated Parmesan cheese over the potatoes in the last 2-3 minutes of cooking.
