Ingredients:

  • 1 lb (about 4 medium) baby potatoes or regular potatoes (cut into chunks or wedges)
  • 1-2 tbsp olive oil
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp dried oregano (or fresh if preferred)
  • 1 tsp dried thyme (or fresh)
  • Zest of 1 lemon
  • Juice of 1/2 lemon
  • Salt and pepper to taste

Instructions:

  1. Prep the Potatoes:
    • If using baby potatoes, cut them into halves or quarters. For regular potatoes, cut them into bite-sized chunks or wedges.
    • Rinse the potatoes under cold water and pat them dry with a paper towel to ensure they crisp up in the air fryer.
  2. Season the Potatoes:
    • In a large bowl, toss the potato pieces with olive oil, garlic powder, onion powder, oregano, thyme, lemon zest, salt, and pepper.
    • Squeeze the juice of half a lemon over the potatoes and toss again until evenly coated.
  3. Air Fry the Potatoes:
    • Preheat your air fryer to 400°F (200°C) for about 5 minutes.
    • Place the seasoned potatoes in the air fryer basket in a single layer. Avoid overcrowding to ensure they cook evenly.
