This Chicken and Chorizo Soup recipe is simple, delicious, and packed with flavor. It’s not too spicy but offers a rich taste with the combination of chicken, chorizo, paprika, garlic, and sweet peppers. It’s perfect for making in a Ninja Soup Maker or any other soup maker you have at home.
What You’ll Need:
- 3 boneless chicken thighs (or breasts), chopped
- 75g chorizo, sliced
- 1 sweet pepper (or 2 mini sweet peppers)
- 1 red onion
- 4 cloves garlic, crushed
- 400g chopped tomatoes or passata
- 1 small potato, diced (skin on is fine)
- 1 teaspoon smoked paprika
- Chicken stock pot or cube
- Crushed chili flakes (optional, for extra heat)
Instructions:
- Prepare the Ingredients: Start by slicing the chorizo and chopping the chicken into small pieces. Dice the sweet pepper and potato (keeping the skin on if you prefer). Peel and crush or grate the garlic. Cut the onion into small pieces.
- Add to Soup Maker: Place all the prepared ingredients (chicken, chorizo, peppers, onion, garlic, potato, tomatoes, paprika, and stock) into the soup maker. Stir everything together to mix.
- Add Boiling Water: Pour in boiling water until the water reaches the MAX line of your soup maker.
- Set Soup Maker: Set the soup maker to the chunky setting. The machine will cook and blend the ingredients for you.
- Optional Blending: Once the soup maker finishes the cooking cycle, you can blend the soup a little more using the manual blend function to get a smoother texture, or leave it chunky if you prefer.
- Fry Chorizo (Optional): While the soup is cooking, you can fry a few extra pieces of chorizo in a pan to use as a topping when serving the soup.
- Taste & Adjust: Taste the soup and if you want more heat, add some chili flakes or adjust the seasoning to your liking.
Tips & Tricks:
- If your soup maker doesn’t recommend adding raw meat, use cooked chicken instead of raw. You can also swap chicken thighs for chicken breasts if you prefer.
- You can adjust the amount of chili flakes based on your spice tolerance.
- If you prefer a smoother soup, you can blend the soup more after it’s done cooking.
