Ingredients:
- 1 lb (about 450g) skinless chicken breasts (or thighs)
- 4 cups (1L) chicken stock (preferably low-sodium)
- 2 medium carrots, peeled and chopped into small pieces
- 2 celery stalks, chopped
- 1 medium onion, diced
- 2 cloves garlic, minced
- 1 teaspoon dried thyme
- 1/2 teaspoon dried rosemary
- 1-2 bay leaves
- Salt and freshly ground black pepper to taste
- 2 cups egg noodles (or your preferred pasta)
- 1 tablespoon olive oil or butter (optional for sautéing)
- Fresh parsley, chopped (for garnish)
Instructions:
1. Prepare the Ingredients:
- Chop the vegetables (carrots, celery, onion, garlic) into small pieces.
- Shred or dice the chicken into bite-sized pieces after cooking (if using a raw chicken breast or thigh). You can also add the whole chicken breast to the soup maker for easy cooking.
2. Add the Ingredients to the Soup Maker:
- Place the chicken (whole or diced), carrots, celery, onion, garlic, thyme, rosemary, and bay leaves into the soup maker.
- Pour in the chicken stock. Season with salt and pepper to taste. Stir everything together.
3. Set the Soup Maker:
- If your soup maker has a “chunky” or “smooth” option, select “chunky“ for a hearty texture. The soup maker will cook and blend the ingredients to your desired consistency.
- Start the soup maker, allowing it to cook for about 20-30 minutes (depending on the model and cooking time indicated).
4. Add the Noodles:
- When the soup maker has finished its cycle, open the lid and stir in the egg noodles.
- Alternatively, if your soup maker is not ideal for cooking noodles directly, you can cook them separately on the stove and add them to the soup after the soup maker is done.
Let the soup maker run for another 5-10 minutes to heat the noodles and ensure everything is well combined.
5. Shred the Chicken (if whole):
- If you added whole chicken breasts, once the soup is done, remove the chicken and shred it using two forks.
- Return the shredded chicken to the soup maker, stir it in, and allow it to heat through.
6. Final Adjustments:
- Taste the soup and adjust the seasoning as needed, adding extra salt, pepper, or herbs to your liking.
7. Serve:
- Ladle the soup into bowls and garnish with freshly chopped parsley.
- Serve with a slice of crusty bread if desired for a complete meal.
Tips:
- Pre-cook the chicken: If you’re using cooked or rotisserie chicken, you can add it directly to the soup maker along with the other ingredients.
- For a thicker soup: If you’d like the soup to be thicker, add a small amount of cornstarch mixed with water during the last few minutes of cooking. Alternatively, blend some of the soup to make it creamier.
- Add extra veggies: Feel free to add peas, corn, or other vegetables of your choice for added nutrition and flavor.
