4-Ingredient Slow Cooker Christmas Cake

Ingredients:
1 box of fruitcake mix (about 500g or 1 lb, typically includes a mix of dried fruits like raisins, currants, and candied peel)
1 cup of orange juice (or apple juice, depending on your preference)
1/2 cup of rum or brandy (optional, you can substitute with more juice or water for a non-alcoholic version)
1 cup of self-raising flour (you can use regular all-purpose flour and add 2 tsp of baking powder if you don’t have self-raising flour)
Instructions:
Prepare the Slow Cooker:

Grease the inside of your slow cooker pot with butter or cooking spray. You can also line the base and sides with parchment paper for easier cleanup later.
Mix the Ingredients:

In a large bowl, combine the fruitcake mix, self-raising flour, orange juice, and rum (or brandy). Stir well to ensure that all the fruit is coated with the flour mixture.
Pour the Mixture into the Slow Cooker:

Pour the prepared cake batter into the greased slow cooker pot and spread it out evenly. The mixture will look quite thick, but that’s fine—it will become moist as it cooks.
Cook the Cake:

Cover the slow cooker with its lid and cook on low for 2 to 2.5 hours. The cake is done when it feels firm to the touch and a toothpick or skewer inserted into the center comes out clean.
Avoid opening the lid during the cooking time as this can affect the cooking process.
Cool and Serve:

Once cooked, allow the cake to cool in the slow cooker for about 10 minutes before transferring it to a wire rack to cool completely.
You can frost it with a little icing sugar, or serve as-is, topped with whipped cream or a dollop of custard.
Tips:
Storage: This cake can be wrapped in plastic wrap and stored at room temperature for up to a week, or refrigerated for longer shelf life.
Flavor Variations: You can add nuts like chopped almonds or walnuts, or even a handful of mixed spices (such as cinnamon or nutmeg) to enhance the flavor.
Non-alcoholic version: If you prefer a non-alcoholic cake, simply replace the rum or brandy with extra fruit juice, or even a splash of vanilla extract.
