Air Fryer Chicken Fajitas Recipe
Ingredients
For the Chicken Marinade:
- 1 lb (450g) boneless, skinless chicken breasts, sliced into strips
- 2 tablespoons olive oil
- 2 tablespoons lime juice (freshly squeezed)
- 2 cloves garlic (minced)
- 1 teaspoon chili powder
- 1 teaspoon cumin
- 1 teaspoon paprika
- 1/2 teaspoon onion powder
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 teaspoon cayenne pepper (optional)
For the Fajitas:
- 1 bell pepper (sliced; any color)
- 1 onion (sliced)
- Tortillas (flour or corn)
- Toppings: avocado, sour cream, salsa, cilantro, cheese, lime wedges
Instructions
- Marinate the Chicken:
- In a bowl, whisk together olive oil, lime juice, garlic, chili powder, cumin, paprika, onion powder, salt, black pepper, and cayenne pepper.
- Add the sliced chicken to the marinade, tossing to coat well. Cover and refrigerate for at least 30 minutes (or up to 2 hours for more flavor).
- Prepare the Vegetables:
- In a separate bowl, toss the sliced bell pepper and onion with a little olive oil and salt.
- Preheat the Air Fryer:
- Preheat your air fryer to 400°F (200°C) for about 5 minutes.
- Air Fry the Chicken:
- Place the marinated chicken strips in the air fryer basket in a single layer (you may need to do this in batches).
- Air fry for 10 minutes, shaking the basket halfway through.
- Add the Vegetables:
- After 10 minutes, add the sliced bell pepper and onion to the basket with the chicken.
- Air fry for an additional 5-7 minutes, or until the chicken is cooked through and the vegetables are tender and slightly charred.
- Warm the Tortillas:
- While the chicken and vegetables are cooking, warm the tortillas in a skillet or microwave.
- Serve:
- Remove the chicken and vegetables from the air fryer. Serve in warm tortillas with your favorite toppings: avocado, sour cream, salsa, cheese, cilantro, and lime wedges.
