Recipe
Ingredients:
- 1 cup unsalted whole roasted cashews (if using salted, reduce the salt)
- 1 cup unsalted pecan halves (if using salted, reduce the salt)
- 1 egg white
- ⅔ cup white granulated sugar (you can use cane sugar, which looks like brown sugar but isn’t)
- ¼ teaspoon salt
- ½ teaspoon cinnamon (adjust based on your taste)
- 2 tablespoons unsalted butter (only for the oven method; use a small cube for greasing the air fryer basket)
- ½ teaspoon vanilla extract
- Optional: Pinch of cayenne pepper if you want a spicy kick
Instructions:
Air Fryer Method:
- Preheat the air fryer for 3 minutes. Take a small cube of butter on a fork and grease the air fryer basket evenly.
- Prepare the egg white mixture: Beat the egg white until frothy, then add sugar, salt, and cinnamon. Mix well.
- Add the cashews and pecans to the egg white mixture, coating them completely.
- Spread the coated nuts in a single layer inside the air fryer basket.
- Air fry at 300°F for 20 to 25 minutes, stirring every 5 minutes, until the nuts are crunchy and caramelized.
- Remove from the air fryer and spread the nuts on parchment paper or a silicone mat to cool down.
- Once cool, store the nuts in an airtight container at room temperature for up to 2 weeks.
Oven Method:
- Preheat the oven to 325°F (163°C). While preheating, cube the butter and place it on a baking sheet. Put the baking sheet in the oven to melt the butter. Remove it once the butter is melted, ensuring it doesn’t burn.
- Separate the egg white from the yolk and place the egg white in a mixing bowl. Add the vanilla extract and whisk until frothy.
- Stir in the sugar, salt, and cinnamon until well combined.
- Add the cashews and pecans to the egg white mixture and toss until they are fully coated.
- Spread the coated nuts on the baking sheet with the melted butter in a single layer.
- Bake for 25 to 30 minutes, stirring every 10 minutes for the first 20 minutes. Keep a close eye on them after 20 minutes to prevent burning. The nuts should be done after about 28 minutes.
- Remove from the oven and allow to cool completely on the counter before storing in an airtight container for up to 2 to 4 weeks.
