Air Fryer Chocolate Fondants

This recipe makes rich and gooey chocolate fondants that are perfect for dessert lovers. They are easy to prepare ahead of time, and you can chill or freeze them until you’re ready to cook. The air fryer gives them a crispy exterior with a molten, gooey center. Serve with ice cream or double cream for the perfect indulgent treat.

Ingredients:

  • 100g unsalted butter, cut into small pieces
  • 20g melted butter, for greasing the moulds
  • 1½ tbsp cocoa powder
  • 100g dark chocolate, broken into pieces
  • 2 large eggs
  • 100g light brown soft sugar
  • 1 tbsp plain flour (sifted)
  • Ice cream or double cream, to serve

Instructions:

  1. Prepare the Moulds:
    Brush the inside of four dariole or pudding moulds with the melted butter. Sprinkle the cocoa powder into one mould, turn it to coat the inside, and shake out the excess cocoa. Repeat this for all the moulds.
  2. Melt the Butter and Chocolate:
    Place the butter and dark chocolate in a heatproof bowl. Set the bowl over a pan of simmering water (make sure the bowl doesn’t touch the water) and stir occasionally until the mixture is melted. Alternatively, you can melt the ingredients in the microwave in short bursts. Let it cool slightly once melted.
  3. Prepare the Batter:
    In a separate bowl, whisk together the eggs, sugar, and a pinch of salt using an electric whisk for 3-4 minutes until it becomes pale, fluffy, and has almost doubled in size. Gently fold in the melted butter and chocolate mixture, then sift in the flour. Mix until everything is well combined.
  4. Chill the Batter:
    Spoon the batter into the prepared moulds, filling them just below the top. Chill in the fridge for at least 1 hour to allow the fondants to set.
  5. Cook the Fondants:
    Preheat your air fryer to 180°C (350°F). Place the moulds in the air fryer and cook for 10 minutes. The tops of the fondants should be set, and they should start pulling away from the sides of the moulds. Leave them to rest for 1 minute before serving.
  6. Serve:
    You can serve the fondants directly in the moulds or turn them out onto plates. Top with a scoop of ice cream or a dollop of double cream.

  6. Let the fondants rest for 1 minute, then serve with ice cream or cream.

Tips & Tricks:

  • If cooking from frozen, add an extra 2 minutes to the cooking time for a perfectly set fondant.
  • Make sure to let the fondants cool for a minute before serving, to allow the molten center to set.

Notes:

If you don’t have dariole or pudding moulds, small oven-safe cups or ramekins will also work fine for this recipe
