Air Fryer Banana Bread

Air Fryer Banana Bread is a simple and tasty recipe that’s perfect for breakfast or as a treat with your coffee. It’s an excellent way to use up overripe bananas that might otherwise go to waste. The bread is soft, full of banana flavor, and easy to make. You’ll love it toasted with a little butter!

Air fryers are fantastic for making quick recipes, and this banana bread is no exception. Using a Cosori 5.8QT air fryer, I’ve baked many things like cakes, cookies, and even full meals. This banana bread takes only 5 minutes to prepare and 40-45 minutes to cook, making it an easy and quick snack or breakfast option.

Ingredients

  • 2 large bananas (about 180g when mashed)
  • ⅓ cup (80ml) vegetable oil, melted butter, or coconut oil
  • 2 large eggs
  • 1 cup (200g) sugar (granulated, caster, or light brown sugar)
  • 2 cups (250g) all-purpose or plain flour
  • 1 ½ teaspoons baking powder
  • 1 teaspoon vanilla extract
  • 1 teaspoon ground cinnamon
  • 2 tablespoons turbinado or demerara sugar (for topping)

Instructions

  1. Mash the bananas: Peel the bananas and mash them in a mixing bowl using a fork or potato masher. You can also use a blender if you prefer.
  2. Mix wet ingredients: Add the oil (or melted butter/coconut oil), eggs, and vanilla extract into the mashed bananas. Mix everything well.
  3. Add dry ingredients: Sift the sugar, flour, baking powder, and cinnamon into the bowl with the wet ingredients. Stir everything until smooth, but don’t overmix.
  4. Preheat the air fryer: Set the air fryer to 320°F (160°C) for 5 minutes.
  5. Prepare the pan: Grease and line a small loaf pan. Pour the batter into the pan and tap it on the counter to remove air bubbles. Sprinkle the turbinado or demerara sugar on top for added crunch.
  6. Bake: Place the loaf pan in the air fryer and bake for 40-45 minutes. Check with a toothpick—if it comes out clean, the banana bread is done. If it’s not fully baked, continue baking for a few more minutes.
  7. Cool and serve: Let the banana bread cool on a wire rack. Slice and enjoy!

Tips:

  • If you don’t have light brown sugar, you can use granulated sugar or any type of sweetener you prefer.
  • Make sure the loaf pan fits comfortably in your air fryer basket. You can also use an 8-inch round cake tin.
  • The banana bread will taste even better slightly warm. You can heat it in the microwave or in a toaster.
